Bread Sauce

1 Medium Onion
2 Cloves
425ml Milk
1/2 teaspoon Salt
6 Peppercorns
1 Small Bay Leaf
75g Fresh White Breadcrumbs
14g Butter

Peel the onion and stud it with the cloves. Put the milk, onion, bay, salt and pepper into a saucepan. Bring the pan close to boiling point then remove from the heat and cover. Allow the flavour to infuse the milk for 30 minutes.

Strain the milk to remove the onion, bay and pepper. Return the milk to the pan and bring to the boil. Stir in the breadcrumbs and butter and allow the sauce to thicken. Serve the sauce with Chicken or Turkey.
