Guacamole

2 Ripe Avocados
4 Tomatoes
1 Small Green Pepper
1 Small Onion
½ Small Lemon
1 Chilli – less (or more) to taste
1 tbsp Olive Oil
Bunch of Coriander
Salt & Pepper

Finely chop the onion and pepper and place in a bowl. Deseed and finely chop the chilli then add to the bowl.

Cut a shallow cross at the top and bottom of each tomato. Put the tomatoes into boiling water for 30 seconds then into ice cold water. Skin the tomatoes, deseed then cut into small chunks and place in bowl. 

Take the Avocado and cut in half around the seed. Remove the seed then use a fork and mash the Avocado in the skin and then scoop into the bowl. Squeeze the juice of the lemon over the mixture. Wash dry and chop the coriander. Add olive oil, salt, pepper and chopped coriander then mix well. Chill before serving.
