Whole Roast Garlic

1 Whole head of Garlic
Olive Oil
Salt & Pepper

20 to 30 cm square of Tin foil

Put the whole head of garlic on it’s side and cut the top 5mm off the whole of the head. Cut just enough off the top to expose the bulbs.

Put the garlic into the middle of the foil. Lift the corners of the foil towards the centre. Season and pour over 1 to 2 table sppons of olive oil.

Twist the foil to close the top. It should look like a big toffee.

Roast in the middle of a hot oven around 220 gas 7 for 50 to 70 minutes depending on oven. The oven will smell great when you open the door and the garlic is ready. The edges of the Garlic should have browned which releases the sugars.

Allow to cool a little then squeeze or use a teaspoon to remove the bulbs from the husk.

Mix the bulbs with a little olive oil and crush to a paste. Do not worry about the brown bits from the edge of the bulbs they add to the end taste.

Use with the pizza dough recipe to make garlic bread.
