Squash, Garlic & Red Pepper Soup

300ml Chicken stock
3 cloves garlic
1 onion
1 small squash
1 small red pepper
salt and pepper

Peel and roughly chop the squash, onion, garlic and red pepper. Cook the onion in a little olive oil until soft, add the garlic, squash and red pepper cover and cook for 5 minutes.

Add the chicken stock and simmer for 25 minutes until the squash is soft. Blend the soup and return to the pan and season with salt and pepper.
