4 medium baking potatoes
1 tablespoon Olive oil
Salt & Pepper
Preheat oven to 425F Gas Mark 7
Cut each potato into 12 wedges and place in a large bowl. Add the remaining ingredients and toss to coat.
Arrange in a single layer in rows on lightly greased a baking tray
Bake at 425F Gas 7 for 20 minutes.
Turn and bake 25-30 minutes until crisp.
