250 ml olive oil
2 tsp fresh lemon juice
1 egg yolk
1tbs white wine vinegar
1tbs boiling water
5 garlic cloves mashed to fine paste
Put all the ingredients except the olive oil in a food processor and whiz for 2 minutes.
Slowly pour in the olive oil while the processor is switched on.
When the mixture is emulsified it is ready to eat.
You can change the amount of garlic cloves or replace raw garlic with roasted from an earlier post.
