1kg Fresh Tomatoes
1 large onion
50g of butter
Salt & Pepper
1 bay leaf
600ml Water
Peel and chop the onion. Cook the onion in the butter in a saucepan until brown. Slice the tomatoes and add to the pan.
Add the water and bay leaf and simmer for 30 minutes. Remove the bay leaf and put the soup in a blender and whiz quickly then return to the pan. Check the seasoning add a little cream if you like and serve.
