Basic White Sauce

30g Butter
30g Plain Flour
1 pint Milk

Put the butter in a small pan and melt on a low heat.

Add the flour to the pan and stir until smooth. Allow them to cook for 2 or 3 minutes and keep stirring.

Increase the temperature a little and pour in half the milk and stir the mixture until it thickens. Add the rest of the milk and stir again until the mixture thickens.

Turn the temperature down and keep stirring for 5 minutes to cook out the sauce to remove any taste of the flour.

If you want a plain white sauce season at this point and you are ready to go.

Cheese sauce – add 25 to 30g Cheese and cook for a few more minutes. Gruyere or parmesan and good choices but and cheese will do.

Parsley sauce – add a handful of fresh chopped parsley.

Taste and season the sauce before serving.
