Chicken Tikka

4 Chicken breasts.
2 Cloves garlic Crushed
1 tablespoon cayenne pepper
1 tablespoon paprika
1 tablespoon curry powder
1 tablespoon salt
1 tablespoon pepper
1cm cube root ginger finely chopped
6 tablespoon Greek yogurt
Juice of 1 Lemon
Optional – dash red food colouring

Cut the chicken into roughly 1.5cm cubes. Put all the other ingredients into a plastic tub with a lid and mix together. You can put everything in put the lid on and shake to mix everything together. Add the chicken and mix well with the marinade. Put the lid on and place in the fridge for a minimum of 2 hours, I make mine the night before so it gets 20 hours.

Heat a griddle pan or the grill. Put the chicken onto skewers(soak wooden skewers in water before use) and place onto the griddle or under the grill for 15 to 20 minutes turning so the chicken cooks evenly.

Serve with boiled rice, naan bread and Indian chutney.
