Honey Glazed Roasted Carrots Recipe

500g Carrots
4tbl Honey
2tbl Hot Water
2tbl Olive Oil
Salt & Pepper

Preheat the oven to 220c or Gas 7

Wash and peel the carrots and cut crosswise into 3cm long pieces. Cut any large pieces in half so all are roughly the same size.

Mix the honey with the hot water. Toss the carrots in the honey, oil, salt and pepper then arrange in a single layer on a baking tray.

Roast for 35 to 40 minutes turning half way.

Broccoli and Blue Cheese Soup Recipe

1 Large head of Broccoli
1 Onion
1 Large Onion
100g Stilton or other Blue Cheese
1ltr vegetable stock
1tsp Olive oil
Salt and Pepper

Peel and roughly chop the onion then cook in the olive oil for 5 minutes until soft.

Peel and potato and cut into even size cubes then add to the pan with the onion.

Add the vegetable stock and bring the pan to a simmer and allow to cook for 10 minutes.

Wash and chop the Broccoli and add to the pan and simmer for 5 more minutes.

Crumble the cheese into the pan but keep some to garnish the soup.

Blend the soup until smooth, season with salt and pepper.

Serve garnished with the remaining cheese and crusty bread.

Scone Recipe

225g Plain Flour
2tsp Baking powder
1 tsp Salt
1tsp Sugar
50g Butter
150ml Milk

Preheat oven to 220c or Gas 7

Sift flour, baking powder, sugar and salt into a mixing bowl.

Cut the butter into small cubes and rub into the flour until the texture is like breadcrumbs.

Slowly add the milk until the mixture forms a dough, this will take between 130ml and 150ml of milk.

On a floured surface roll the dough out to 2 cm thick and cut out scones using a cutter.

Arrange scones on baking tray and cook for 12 to 15 minutes then allow to cool on a cooling rack.

Oven Cooked Meatball Recipe

500g Minced Beef
1 Small Onion
1 Clove Garlic
Pinch Thyme
Salt & Pepper

Preheat oven to 190c or Gas 5

Put the beef into a bowl and season with salt and pepper then add the thyme. Peel and crush the garlic and add to the beef. Peel and grate the onion into the beef.

Mix all ingredients together and divide the beef into even size balls, I use an ice cream scoop for this. Arrange meatballs on a try and cook in the middle of the oven for 35 minutes.

Serve with pasta and sauce.

Banana Bread Recipe


225g Sugar
115g Butter
2 Eggs
3 Bananas peeled
170g Flour
1 tsp baking soda
1 tsp of vanilla extract
1/4 tsp of salt

Preheat oven to 170c or Gas 3

Put all the ingredients into a bowl and beat together with a mixer until smooth.

Pour into a greased loaf tin and bake for 45/50 minutes. Test with skewer to see if cooked.
