Rice Pudding Recipe

600 ml Milk
56g Rice – short grain or basmati
14g Butter
1tbl Sugar
Pinch of Nutmeg

Pre heat the oven to 325ºF or Gas 3.
Place the milk, rice, butter, nutmeg and sugar into a greased 2 pint oven proof dish.
Place on the middle shelf in the oven and bake for 2 – 2½ hours stirring a couple of times during the first hour of cooking.

Continue cooking until a golden brown crust has formed.

Serve hot with a spoonful of jam.

You can replace the nutmeg with fresh vanilla scraped from the pod. You can add the empty pod to the milk while it heat to remove the flavour
