1 Medium Sized Squash
2 Sweet Potatoes
Garlic Cloves
3tbl olive oil
Fresh Thyme
Preheat the oven to 220C or Gas 7
I like the skin left on the sweet potatoes so give the skins a good wash then chop into rough 2cm square pieces. Peel the squash, remove the seeds and cut the flesh into 2cm square pieces. Wash the thyme and peel the garlic cloves. Put everything in a roasting tray and add the olive oil and mix well. Roast for 40 to 50 minutes turning once or twice until everything starts to brown.
