Pizza Topping Sauce

1 Medium Onion
Garlic – To Taste I use 2 or 3
Pinch fresh or dry Oregano and Tyme
Olive Oil
1 Tin Tomatoes
Salt & Pepper

Fine chop the onion and put into a pan with a slug of the olive oil, Oregano, Tyme & Salt (add the pepper at the end). Cover and cook slowly on low ring until onion is soft, crush the Garlic and add to the pan. Cover and cook for 5 minutes.

Add the tin of tomatoes to the pan and turn the heat up slighly. Allow to cook uncovered for 15 to 20 minutes until the tomatoes have broken down to a smooth sauce.

Use with the pizza dough recipe.
