Slow Braised Red Cabbage

1 Red Cabbage
1 Small Onion
1 Tsp Cinnamon
1 Tsp Sugar
100ml Water or Chicken Stock
Salt & Pepper
Olive Oil

Preheat the oven to 170C or Gas 3

Peel and slice the onion. Put a little olive oil in a casserole dish and cook the onions for 5 minutes until soft.

Peel, wash and slice the red cabbage and add to the pan. Add the cinnamon, sugar, salt, pepper and water and stir well.

Put the casserole lid on or cover with foil. Place in the preheated oven for 120 minutes.
